1. Grilled Ribeye Steak with Cabernet Sauvignon

Ingredient: Here is everything you’ll need!

  • Ribeye steaks: The perfect grill thickness is usually 1 ½ inches thick.
  • Butter: Enough for a compound butter base
  • Lemon juice: Even lime works if it is fresh
  • Parsley:  Make sure it is flat-leaf and fresh
  • Fresh Herbs: You can choose from Thyme, Oregano, Rosemary, or Sage.
  • Olive oil: For flavour and to avoid sticking the steaks to the grill.
  • Salt and black pepper to taste

Recipe:

  1. The first step in the recipe is to make your herb compound butter. Combine the butter, lemon juice, parsley, herbs of your choice, salt and pepper together. Mix well and transfer the mixture into a plastic wrap. Refrigerate until firm (usually 40 minutes).
  2. Next, preheat your grill to a medium high temperature. Pat your steak with a paper towel and cover it up with olive oil and salt. Transfer your steak on the grill and leave it for 4 minutes before you rotate it for another 3 minutes. This can help you secure the perfect cross marks on your steak. Flip the steak to the other side and repeat the same. Once it reaches your desired level of doneness remove the steak from the grill.
  3. Slice the chilled butter into four circular slices. Once the steaks are ready, place the butter on the steak and let it melt into it for 5 minutes. Drizzle a hint of black pepper and slice for perfection!

Alcohol Pairing: The bold and enriching flavours of black fruits in the Cabernet Sauvignon would pair excellently with the juicy steak. And with its tannins and acidity, your steak’s fattiness is sure to be balanced out!

2. Lamb Chops with Merlot

Ingredients: Here’s what you must have!

  • Lamb chops about 4 ounces
  • Olive oil as needed
  • Minced garlic cloves
  • Freshly crushed rosemary leaves
  • Sea salt and freshly ground black pepper to taste
  • Mint jelly

Recipe:

  1. Set the oven temperatures to 425 degrees F (220 degrees C). Until the oven heats up, cut off the excess fat from lamb chops. Leave out a little fat for flavour.
  2. To marinate, coat each lamb chop in olive oil and season with garlic, rosemary, salt, and pepper. You can choose to do this by chopping your garlic and Rosemary or making a quick paste. Transfer the marinated lamb chops into a cast iron skillet.
  3. Bake the marinated lamb chops and you’ll preheat the oven for about 8 minutes. Use an instant thermometer to measure the temperatures at about 140 degrees F. This is when your lamb chops are cooked to medium rare.
  4. Once your lamb chops are cooked, cover it with foil and let it settle for about 10 minutes. Serve these easy-to-make lamb chops with jelly on the side

Alcohol Pairing: The medium-bodied Merlot is ideal for your lamb chops. Its smooth and velvety texture is enriched with flavours of plum and cherry. What a sweet little combination!

3. Salmon Fillet with Chardonnay

Ingredients: This is all you’ll ever need!

  • Salmon fillets 4-6 ounces
  • Olive oil
  • Butter
  • Minced garlic
  • Lemon juice
  • Salt and pepper to taste
  • Chopped parsley

Recipe:

  1. Firstly, season your salmon with salt and pepper taste. You can also add or drizzle drops of olive oil for easy coating.
  2. Prepare a large skillet by heating it over medium flame. Place the salmon fillet on the skillet, skin side up. Cook these fillets for 5 minutes or until the surface turns golden brown.
  3. Flip the salmon and cook the other side for another additional 6 minutes. The perfectly cooked salmon will look opaque and flaked.
  4. Transfer the salmon to a plate temporarily until you prepare the butter mixture.
  5. For the butter mixture, add the butter to the pan and wait for it to melt before you add the garlic. Cook for 30 seconds while constantly stirring for the flavours to combine well. Squeeze in the lemon juice and add salt and pepper to taste.
  6. For the next step, you must transfer the salmon back into the pan and spoon the sauce to cover the salmon completely. Once you think that the salmon is perfectly sauced, sprinkle some chopped parsley over the salmon and serve!

Alcohol Pairing: Full-bodied white wines like the Chardonnay combine perfectly with rich oily fish like Salmon. Chardonnay’s buttery and citrusy notes would add a refreshing flavour to the fish!

4. Chicken Parmesan with Chianti

Ingredients: Here is everything you need!

  • 4 chicken breast halves: Make sure it’s skinless and boneless
  • Two large eggs
  • Panko bread crumbs: as much as needed
  • Grated Parmesan cheese: ¾ to 1 cup
  • All-purpose flour: use as needed
  • Olive oil: A generous amount for frying and drizzling
  • Prepared tomato sauce: About ½ cup
  • Mozzarella sticks, cut into small cubes: ¼ cup, unless you prefer to go overboard!
  • Chopped fresh basil: ¼ cup
  • Grated provolone cheese: ½ cup
  • Salt and black pepper to taste

Recipe:

  1. Before we get started, preheat your oven to about 450 degrees F. While the oven heats up, put your chicken breasts into two resealable freezer bags and place them on a solid counter. You can also use any thick plastic that is recommended for kitchen use. Pound your chicken with the meat mallet using the flat side. Pound it well till it reaches ½ inch thickness.
  2. Next, season your chicken breasts with salt and pepper. Using a sifter, sprinkle all-purpose flour over the chicken breast to give it an even coating on both sides.
  3. Crack open the eggs in a shallow bowl and beat them until the white and yellow yolks are completely missed. In a separate bowl, mix your bread crumbs and Parmesan cheese (about ½ cups will be adequate) in a separate bowl, set aside.
  4. Now this might get a little messy!  Dip your flour-coated chicken in the egg mixture and transfer them to the breadcrumb mixture. Remember to press your chicken breast into the bread crumbs for a thick even coverage. Continue for all chicken breasts. And let them rest for about 10 to 15 minutes
  5. Pour in about half an inch of olive oil into a large skillet and place on medium to high heat. Wait for the oil to simmer and cook the chicken breasts until golden. About two minutes a side will be adequate as the chicken will be subjected to another round of cooking in the latter stages!
  6. Once Golden, transfer the chicken into a baking dish. Top each breast with tomato sauce covering the face of the chicken breast. Add equal amounts of mozzarella cheese, fresh Basil and Provolone cheese, and wild sprinkling Parmesan to cover the top. You can also drizzle olive oil for a smoother and healthier finish!
  7. Transfer chicken to a baking dish. Top each breast with 2 tablespoons tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle remaining Parmesan over top and drizzle each with 1/2 teaspoon olive oil.
  8. Transfer the chicken tray to your previously heated oven and wait for the cheese to be brown and bubbly. This would be about 15 to 20 minutes when the chicken is not pink in the centre. You can also use a thermometer to read the degrees at 165 degrees F. Once it’s done, leave the chicken for 5 minutes until it’s the perfect temperature to touch. Serve hot immediately for an impressive flavour!

Alcohol Pairing: Chianti carries a unique flavour with a balance of tannins and acidity. The richness of the cheese and tomato sauce would blend perfectly with the notes of cherries, balsamic vinegar, dried herbs, smoke, and game!

5. Grilled Vegetables with Sauvignon Blanc

Ingredients: This is everything you'll ever need!

  • Cooking spray, for the grill
  • 1 yellow squash, cut into rounds
  • 1 zucchini, cut into rounds
  • 8 ounces cremini mushrooms, stemmed
  • 1 small red onion, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 ear fresh corn, cut into 1-inch rounds
  • Extra virgin olive oil, for drizzling
  • Sea salt and freshly ground black pepper

Recipe:

  1. This recipe is perfect for all the vegetarians and vegans out there! To start, heat your grill to a medium-high temperature. Choose your favourite non-stick cooking spray and spray a thick layer on to the grill!
  2. Get your metal skewers out and drill through the centre of the vegetable slices. Drizzle with olive oil, salt and pepper to taste.
  3. Once the skewers are ready, place them on the grill for about 8 minutes beside. When the vegetables are ready, they would usually be tender and lightly charred.
  4. If you think the vegetables are cooked, remove them from the grill and transfer to a plate. Season with herbs or a favourite sauce or dressing for an enhanced experience

Alcohol Pairing: Feel the fruity and citrus punch with the crisp Sauvignon Blanc, as you pair it with your light-flavoured grilled vegetables. Embrace notes of green apple, passion fruit, peach and distinctive gooseberry!
